Pork or Beef Crock Pot Roast

Roasts are also very easy to make, especially if you use a crock pot, and you can use the meat and vegetables you want. I never include any onions, garlic or spices because I can't digest them, but I find that the herbs I put are enough to add a bit of extra flavour.

Ingredients:
-1 beef or pork roast
-2 carrots, or 1 small (340g) bag of baby carrots
4 large potatoes
-1 tablespoon (15 ml) of dry parsley
-1 tablespoon (15 ml) of dry oregano
-1/2 teaspoon (2.5 ml) of salt
-1/2 teaspoon (2.5 ml) of ground black pepper
Recipe and cooking instructions:
-Put the beef or pork roast into a crock pot.
-Add water until the roast is mostly covered.
-Add 1 tablespoon (15 ml) of dry parsley, 1 tablespoon (15 ml) of dry oregano, 1/2 teaspoon (2.5 ml) of salt, and 1/2 teaspoon (2.5 ml) of ground black pepper into the crock pot, and mix into the water.
-Add the peeled and cut carrots (or use the content of the bag of baby carrots) plus potatoes into the crock pot. -Add a little bit more water until everything is covered. -Plug in the crock pot and cook on low for 8 hours, or high for 6 hours.
-Turn the crock pot off when everything is ready.
-Remove the roast from the crock pot and place the tender
meat on a cutting board to slice pieces. Remember to
remove any string first. Also, please note that the roast will
shrink slightly while it's cooking.
-Serve the meat on plates with the vegetables.
-If desired, pour a bit of broth on each plate.
